Grilled Orange-Coconut Jam Chicken Recipe

INGREDIENTS: 1/4 cup Sammi's Orange Coconut Jam mixed with water 2 tablespoons olive oil 2 cloves garlic, minced 1/2 teaspoon dried thyme 1/2 teaspoon dried oregano Kosher salt and freshly ground black pepper, to taste 4 boneless, skinless chicken breasts   DIRECTIONS: In a medium bowl, whisk together Orange-Coconut Jam, garlic, thyme, & oregano; season with salt and pepper, to taste. Reserve 1/4 cup and set aside. In a gallon size Ziploc bag or large bowl, combine glaze mixture and chicken; marinate for at least 1 hour to overnight, turning the bag occasionally. Tamarind Glazed Pork Chops

Ingredients   4 Med. Pork chops 1/8 Tsp. Salt 1/8 Tsp. Pimento (All Spice) Powder 1/4 Small Scotch Bonnet (sliced) 1 Medium Onion (sliced) 1 Large Clove Garlic 4 Tbsp. Sammi’s Tamarind Jam 1/4 Tbsp Cooking Oil Of Choice Directions Rinse pork chops and dry. season with chopped garlic, sloth bonnet pepper, salt and pimento powder. Heat sauce pan, add 1/4 Tbsp oil. When hot add pork chops. When brown on either side remove chops and put into pot and add 1/4 cup of water then cover. Keep adding water every 10 mins until tender. Cook for 30-35 mins. INGREDIENTS 1/2 cup Sammi's Gourmet Treats Orange-Coconut Jam 2 tablespoons fresh lemon juice 1 teaspoon sweet paprika 1/4 teaspoon cayenne pepper 4 chicken breast halves on the bone, with skin (10 ounces each) Salt and freshly ground black pepper DIRECTIONS Preheat the oven to 425°. In a small bowl, stir together the Orange-Coconut Jam, lemon juice, water, paprika and cayenne. Put the chicken breasts on a rimmed baking sheet. Using a sharp knife, make 2 deep slashes in each breast. Season the breasts with salt and black pepper, then brush most of the Orange-Coconut glaze all over them. Bake for 15 minutes.
