I’ll show you how to make a Jamaican Christmas cake. If you grew up in Jamaica you know this cake is delicious and a delicacy. My mother loved cooking during Christmas time in Jamaica. You will find that most Jamaicans have their own variation of this cake and I am sharing my version with you. It doesn’t matter whether you celebrate Christmas or not, this cake is deliciously sweet on its own.

Ingredients
1 pound(s) Butter or Margarine
1 pound(s) Brown sugar
4 medium eggs or 6 small eggs
1/2 teaspoon(s) vanilla essence
1/2 teaspoon(s) almond flavouring
1 teaspoon molasses
6 cup(s) all purpose flour
1 teaspoon(s) mixed spice
4 teaspoon(s) baking powder
2 teaspoon(s) nutmeg
6 tablespoon(s) Browning
2 1/2 cup(s) baking wine
1/2 cup white rum
1 pound(s) mixed fruits, (raisins, prunes, currants, cherries) chopped, pre-soaked and steamed in wine)
Directions
- Cream Butter or Margarine and sugar until light and fluffy.
- Gradually beat in eggs one at a time. Add vanilla and almond flavouring.
- Combine all purpose flour, mixed spice, baking powder and nutmeg.
- Gradually fold the flour mixture into the creamed mixture alternately with the browning, molasses, wine, rum and mixed fruits.
- Scrape into a greased and lined 12″ baking tin. Bake for 1 1/2 hours at 180°C/350°F or until a metal skewer inserted comes out clean.
To Serve: Allow to cool, slice and serve.
